Clarification du jus de pommes. Le procédé traditionnel de production de jus de pommes clarifié nécessitait l'emploi d'agents de collage (gélatine, bentonite), avec de longues durées de décantation (24 à 48 h) parfois non maîtrisables et d'adjuvants de filtration (Kieselguhr). Aujourd'hui toutes les unités ont adopté la filtration tangentielle (microfiltration ou ultrafiltration) pour clarifier le jus de pommes.
