Le terme "projections" est nettement préférable à celui de "éclaboussures". "Éclabousser" veut dire "couvrir d'un liquide salissant qu'on a fait rejaillir accidentellement", et "éclaboussure" désigne une "goutte d'un liquide salissant qui a rejailli". Cet aspect "salissant" ne convient pas ici. Et "projections" se retrouve dans de bons ouvrages en français (dont les normes de l'AFNOR).
