La dénomination de "cuir" devrait en principe désigner la peau ayant subi le tannage, tandis que celle de "peau" devrait être réservée aux dépouilles animales brutes. Toutefois, la terminologie est confuse sur ce point et la coutume s'est établie de désigner aussi sous le nom de "cuir" les dépouilles animales brutes des gros bovins, le terme "peau" étant réservé aux dépouilles des bêtes de petite taille, telles que les veaux, les chevreaux, les moutons, etc. Si l'on désire bien spécifier, on dit : cuirs verts ou peaux brutes, et cuirs tannés ou cuirs finis.
