Les désurchauffeurs de vapeur ont pour but d'abaisser la température d'un flux de vapeur surchauffée pour ramener la température de la vapeur surchauffée au voisinage de la température de saturation. Les désurchauffeurs peuvent également être constitués par des échangeurs tubulaires. Ce type d'appareil n'est guère employé que pour certains désurchauffeurs servant au réglage de la surchauffe des chaudières.
