A powdered, free-flowing butterlike product [is] prepared by homogenizing cream or butterfat with nonfat milk solids and spray-drying under carefully controlled conditions. (...) Such products may contain emulsifiers and additives to increase the pH and aid retention of volatile flavorful fatty acids.
