The hard calcium carbonate external skeleton of the coral animal. Many individuals build up stony masses of this material which is often cut as a gemstone. The oxblood red color(arciscuro or carbonatto) is most valuable. It also comes in white(blanco), pink, cream-color, pale flesh pink(pelle d’angelo), pale rose(rosa vivo), salmon color(secondo coloro), red(rosso) and dark red(rosso scuro), yellow, brown, blue violet and black.

Yellow potatoes have skins and flesh that ranges from pale yellow to golden yellow. Their flesh has a buttery flavor and they are used for baking, boiling, roasting, and mashing. Some yellow potato varieties are Bintje, Charlotte, Yellow Finn, and Yukon Gold. It is a type of potato that will typically not develop a brown tone when cut as quickly as some varieties.

The classic crookneck squash has a bulbous shape with intensely warty yellow skin. When the bumpy squash is cut open, it reveals pale yellow flesh and seeds. The entire squash, including seeds and skin, is edible, and it has a sweet, slightly nutty flavor.

The Concord grape originated in 1854 and was discovered by E. W. Bull. The berries have a heavy wax bloom with blue skin and pale green flesh. Berry and bunch size is medium with a somewhat compact conical cluster shape. The Concord's skin is reasonably durable and separates easily from its pulpy flesh. Its primary use is for juice and jam/jelly preserves, and for fresh market consumption. Many years ago, the Concord was used in port wines but that is no longer acceptable for premium wine production in Ontario.

Cortland is a type of apple. After the many attributes of McIntosh were discovered, plant breeders began crossing it with other varieties to enhance its traits. One of the earliest was the Cortland, combined with the Ben Davis variety. Its flavor is sweet compared to McIntosh, and it has a flush of crimson against a pale yellow background sprinkled with short, dark red stripes and gray-green dots. Cortland has very white flesh and is an excellent dessert apple.

La pomme Cortland n'a pas une apparence bien attirante mais si on peut passer par-dessus sa pelure épaisse, on y trouvera un fruit à chair très blanche, juteux et sucré à souhait. La Cortland est une pomme de choix pour la cuisson au four car elle ne s'émiette pas facilement, elle est aussi très pratique pour les salades car sa pulpe ne brunit pas.
