WATER ACIDIFICATION [8 records]

Record 1 2011-06-02

English

Subject field(s)
  • Food Industries
  • Breadmaking
DEF

Dough containing active yeast, saved from one baking for the next.

CONT

A sourdough is one that is acidified and leavened by its microorganisms and that can be perpetuated("refreshened") by adding flour and water to provide continuous acidification and fermentation. Sourdough performs three functions : leavening, acidification, and flavor development.

CONT

Prospectors and pioneers used sourdough for making bread to avoid the need for fresh yeast.

CONT

Decalcification and acidification with water containing carbon dioxide are intrinsically slower...

OBS

  • Érosion et corrosion (Géologie)
  • Géochimie
  • Science du sol
DEF

Record 3 2001-11-29

English

Subject field(s)
  • Air Pollution
CONT

In USA, lakes in the Adirondack Mountains represent the most well-known example of water acidification(Schofield, 1976). The precipitation has a pH of 4. 1-4. 3. 51% of 217 mountain lakes have a pH below 5. 0; 90% of these have lost their fish stocks. During the period 1929-1937, only about 4% of the lakes were reported to have pH below 5. 0.

DEF

  • Fatty Substances (Food)
  • Chemistry
DEF

The by-product obtained from the alkali refining process. On acidification this material yields crude fatty acids called "acid oils". Soap stock consists of a mixture of soap, free caustic soda, water, oil phosphatides and other impurities which are removed from the crude oil during the refining process.

DEF

Researchers have concluded that, since nitrate reaches surface waters in small amounts relative to its loadings on an annual basis and does not accumulate in surface waters, its influence on long-term surface water acidification is less than that of sulphate.
