Coloration jaune de la graisse, et uniquement de la graisse, d'intensité très variable (jaune à peine marquée à jaune cuivrée).

OBS

L'intensité de la coloration augmente donc avec l'âge des animaux. Sur les animaux très âgés, l'accumulation des caroténoïdes s'associe à une modification structurelle du tissu adipeux, ce qui donne une coloration jaune-orangé ou ocrée (adipoxanthose sénile).

OBS

Systématique chez les chevaux, les bovins et les caprins, rare chez les ovins, inexistante chez le porc.
