Le farinographe se pratique exclusivement sur farine. Il nécessite donc lui aussi la réalisation préalable d'une mouture. Cette technique permet de mesurer la consistance d'une pâte. Son principal intérêt est de pouvoir calculer la capacité d'absorption d'eau pour qu'une farine donne une pâte d'une consistance donnée (en l'occurrence, une consistance de 500 Unités Farinographiques).
