La grasa de la manteca [mantequilla] es una de las más complejas que se conocen. Se encuentran en ella muchos ácidos grasos saturados e insaturados, de los cuales el más importante y característico es el ácido butírico, que solo aparece en la leche. Debido a esto, la grasa de la leche recibe el nombre de grasa butírica.
