lyophilisation. Procédé de conservation fondé sur la déshydratation par le froid, également appelé «cryodessiccation». Le traitement comporte trois étapes en continu : une surgélation classique, puis un chauffage sous vide du produit surgelé pour réaliser sa sublimation (son eau passe directement du stade solide de la glace à l'état gazeux de la vapeur sans retrouver l'état liquide), et enfin un chauffage rapide pour éliminer l'eau résiduelle.
