La notion d'«oasis alimentaire» est construite en opposition à celle de désert [alimentaire] [...] Elle est par ailleurs fréquemment utilisée pour illustrer les effets de l'action publique pour améliorer l'offre alimentaire dans un quartier : on passe alors d'un désert à une oasis. Le terme est donc assez largement repris par les institutions politiques mises en place pour lutter contre les déserts alimentaires [...] En reprenant la définition du désert, on peut proposer une définition de l'oasis alimentaire comme une zone où l'accès à des fruits et légumes frais est facilité pour les habitants, particulièrement pour les communautés les plus défavorisées.
