A technique that has become useful in studies of wheat proteins is called gel electrofocusing. In practice this technique is similar to gel electrophoresis but it differs in principle. It separates a complex mixture of proteins according to a characteristic property called isoelectric point. Proteins that have different amino acid compositions have different isoelectric points. Resolution of wheat proteins by this technique is slightly better than that obtainable with gel electrophoresis, but the albumin (water-soluble) and gliadin (alcohol-soluble) components overlap in their separation range, both having isoelectric points in the region from five to eight on the scale used to express acidity or alkalinity of water solutions (pH). 2, record 2, English, - gel%20electrofocusing
