La méthode usuelle de calculer l'équipement de réfrigération et le travail qu'elle peut faire se calcule en tonnage; à savoir que telle machine est une 10 tonnes et/ou celle-ci est une 100 tonnes. Le terme «tonnes» dans ce cas représente la chaleur requise pour réduire une tonne de glace à 32°F en eau à 32°F. Il représente aussi le montant de chaleur qui doit être extraite à l'eau pour en faire de la glace. La chaleur latente de la glace est de 144 B.T.U. Alors, 144 B.T.U. doivent être extraits de chaque livre d'eau pour la transformer en glace. (144 X 2 000 = 288 000 B.T.U. pour chaque tonne d'eau).
