Subject field(s)
  • Culinary Techniques
DEF

Soften food or certain ingredients by soaking in liquid.

OBS

Macerating is marinating as applied to fruits and occasionally to vegetables. Quite simply, it means to steep fruit in sugar ... or alcohol so that it softens while absorbing the flavorings. At the same time, juice is drawn into the macerating liquid.

French

DEF
