Le malt de brasserie ne contient plus que 3 à 4 % d'humidité. Sa conservation est assurée par le séchage. Il est ensuite dégermé à l'aide d'une dégermeuse : le malt est débarrassé des germes, des radicelles, de la poussière et est poli, puis placé dans des silos bien aérés et protégés de la poussière. L'activité des enzymes, stoppée par le touraillage, reprendra au brassage, quand celles-ci seront de nouveau en contact avec l'eau.
