L'élevage du vin s'effectue en barriques dans le chai de vieillissement, où la température ne varie pas de plus de deux degrés d'un bout à l'autre de l'année, avec une hygrométrie constante de 72 %. Le séjour en fûts dure en moyenne de 10 à 12 mois.

Le chai de vieillissement compte 86 barriques de chêne neuves d'une contenance de 225 litres chacune que l'on peut admirer du caveau de dégustation.
