Pickling inhibitors are interfacially active organic or inorganic substances. As a result of electrostatic interactions, they cover the iron surface with a monomolecular layer and thus reduce the pickling attack.

L'utilisateur sera amené à faire un compromis lors du choix de l'inhibiteur de décapage entre une grande efficacité inhibitrice lors du traitement et une désorption facile après décapage. En effet, l'adsorption d'un inhibiteur de décapage doit être facilement réversible et ne doit pas se révéler pénalisante pour d'autres réactions effectuées en milieu acide (cas de la phosphatation par exemple).
