Dans la méthode champenoise, opération visant à amener les dépôts contre le bouchon par le mouvement imprimé aux bouteilles placées sur des pupitres.

CONT

Le remuage dure environ un mois. Tous les jours, l'ouvrier remueur saisit chaque bouteille par le culot et lui imprime une série de «coups de poignets», c'est-à-dire une série d'oscillations à une cadence rapide complétée d'un mouvement de rotation. Grâce à cette manipulation spéciale, le dépôt glisse d'abord vers l'épaulement et ensuite dans le goulot sans troubler le liquide.
