Accident de croissance des grains de céréales dû à un coup de chaleur.

L'échaudage des céréales est un accident de croissance des grains qui est dû soit à un coup de chaleur, soit à une attaque parasitaire (piétin-échaudage).

OBS

Cet accident se produit lorsque les températures maximales dépassent 30 °C à un stade phénologique bien déterminé. Il consiste en une perte d'eau importante du grain qui n'est pratiquement pas réversible chez les variétés sensibles; cette déshydratation ne permet plus le remplissage complet du grain qui se présentera à la récolte ridé et avec une faible teneur en amidon.
