Le "sour mash" est la technique de fabrication du bourbon. Pour faire le bourbon on laisse macérer des grains dans de l'eau jusqu'à ce qu'ils se transforment en une sorte de bouillie sûreuse. Il y a 3 sortes de whiskey dont la technique de fabrication diffère, le bourbon aux États-Unis, le scotch en Écosse et le rye au Canada - (explications fournies par un spécialiste des alcools à la maison des vins).
