La réglementation en vigueur jusqu'ici a permis de répartir les différents établissements hôteliers en catégories. À chacune d'entre elles correspond un nombre d'étoiles déterminé qui croît avec le confort de l'établissement. (MAZETTI et FRANCILLON, 1967 : 13) Normes et procédures de classement des hôtels, relais de tourisme et motels. (BOURSEAU, 1966 : 833) Remarques : Le classement des hôtels est rigoureusement respecté en France, où l'Office national du Tourisme exerce un contrôle minutieux. (cf. GAUTIER, 1962 : 1 et 2) En Suisse, les hôtels sont classés par rang : 1er rang, 2e rang, etc. Dans la plupart des autres pays, les hôtels sont divisés selon leur classe : classe de luxe, 1re classe, 2e classe, etc. Au Canada, il n'existe pas encore de système de classement des hôtels.
