Les techniques de production de M. Carré respectent strictement le cahier des charges européen. Aucun engrais synthétique n'est utilisé; une rotation longue des cultures est pratiquée pour éviter une surexploitation de la terre; le désherbage se fait de façon manuelle voire thermique; la protection contre les nuisances s'effectue également par des procédés naturels : préservation des prédateurs naturels des ravageurs grâce notamment à l'entretien de haies en bord de cultures; M. Carré se refusant même d'utiliser le méthaldéhyde, engrais chimique pourtant autorisé pour éliminer les limaces.
