Temporary emulsions. A simple oil and vinegar dressing is called a temporary emulsion, because the two liquids always separate after being shaken up.

La vinaigrette se compose principalement de vinaigre et d'huile, deux liquides qui, au départ, ne sont pas miscibles. Cependant, en les fouettant bien ensemble, on obtient une émulsion temporaire. (...). Il suffit (...) de laisser reposer la vinaigrette quelques minutes pour constater que l'huile remonte à la surface du vinaigre. La vinaigrette constitue donc une émulsion instable.
