Cette forme, qui paraît se rapprocher plus qu'aucune autre de la plante sauvage, est aujourd'hui très rare dans les cultures, au moins en France. Elle se distingue par ses feuilles assez étroites, aiguës, très fortement sagittées, ses pétioles teintés de rouge et sa graine armée de cornes piquantes.
