La fanaison résulte d'une simple évaporation, ce qui différencie le phénomène d'une plasmolyse; cependant, les grandes fonctions physiologiques diminuent d'intensité, puis s'arrêtent. On peut distinguer trois étapes : la fanaison naissante, pendant laquelle les stomates se ferment, les échanges gazeux respiratoires sont ralentis et la photosynthèse est arrêtée; la fanaison temporaire, où certains des organes, peu sclérifiés, s'affaissent et les fruits se rident, ces phénomènes étant réversibles; enfin, la fanaison définitive ou flétrissement, où les troubles sont irréversibles, la plante meurt, le déficit hydrique devenant létal. 2, record 1, French, - fanaison
