That in which heat is conveyed to the baking chamber from the furnace by hermetically sealed tubes containing a small quantity of water. The tubes slope slightly downwards to the furnace so the water is always being heated and converted to steam.

In general, ovens are either direct fired, or heated by steam. In a direct fired oven the heat is generated through combustion of the fuel, while in the steam heated oven, the steam needed to heat the oven is generated in a boiler.
