[Les carraghénanes] sont composés de chaînes de galactanes portant des groupements sulfates, ce qui [leur] confère un comportement de polyanions. De nombreuses fractions ont été séparées, les plus importantes étant les kappa et les lambda-carraghénanes. Chacune se distingue par le nombre et la position des groupements sulfates fixés sur l'unité de digalactane.
