Le sucre d'érable est le dernier produit obtenu par évaporation de l'eau d'érable, après le réduit, le sirop, la tire et le beurre. Le sucre mou, très consistant, conserve tout de même un minimum de tendreté, tandis que le sucre dur est un bloc qui se désagrège en morceaux secs et durs ou en granules.
