A colloidal, amorphous, water-soluble substance of glucidic nature. Insoluble in alcohol. Produced by some trees (Leguminoseae, Sterculiaceae) and used mainly as an emulsifying or stabilizing agent.

Gums are distinguished from resins by being water-soluble and are easily represented by chemical formulae.
