L'étape d'adhésion irréversible est une phase charnière temps-dépendante. Les microorganismes doivent être vivants (ce qui n'était pas nécessaire lors de l'adhésion réversible) et capables d'exprimer un certain nombre de gènes conduisant à l'acquisition de nouvelles structures adhésives telles que les fimbriae, les flagelles latéraux ou la synthèse d'exopolymères organiques (ou «slime») et d'adhésines.

¿Cómo se produce la putrefacción de la carne? Por un fenómeno conocido con el nombre de adherencia bacteriana primero de una manera inestable que desaparece por el lavado y, luego, de una forma irreversible porque las bacterias quedan virtualmente "pegadas" en la carne al generar microfibrillas, que no pueden eliminarse de ninguna forma e irremediablemente dan lugar a la putrefacción.
