Once considered chemical curiosities, sequestrants (chelating agents) have taken a significant place among other stabilizer food additives as vital tools of the food industry. As such, sequestrants help to establish, maintain, and enhance the integrity of many food products. For the most part, sequestrants react with metals to form complexes which, depending on the stability of the metal complex, tend to alter the properties and effects of metal in a substrate. 4, fiche 1, Anglais, - chelating%20agent

Chelation (from Greek, chelè, meaning claw) is the process of reversible binding (complexation) of a ligand - the chelant, chelator, chelating agent, sequestering agent, or complexing agent - to a metal ion, forming a metal complex, the chelate. The term is generally reserved for complexes in which the metal ion is bound to two or more atoms of the chelating agent, although the bonds may be any combination of coordination or ionic bonds. 4, fiche 4, Anglais, - demineralising%20agent

Further experiments showed that by adding a demineralising agent (EDTA) to the soil, plants could accumulate a larger quantity of metals. Testing also demonstrated that the demineralising agent facilitated the migration of metals towards the top of the plant (stems and leaves). 1, fiche 4, Anglais, - demineralising%20agent

It is recognized that there are cases where liquid exchangers are employed and where it may be difficult to distinguish between the separation process as belonging to ion exchange or liquid-liquid distribution, but the broad definition given here is regarded as that which is most appropriate. A monofunctional ion exchanger contains only one type of ionogenic group, a bifunctional ion exchanger two types and a polyfunctional ion exchanger more than one type. In a macroporous ion exchanger the pores are large compared to atomic dimensions. 3, fiche 5, Anglais, - ion%20exchanger

Ion exchange is the reversible interchange of ions between a solid ion-exchange medium and a solution .... In industry both cation and anion exchanges are employed to prepare boiler feed-water, deionize or demineralize process waters .... To be effective, solid ion exchangers must (1) contain ions of their own, (2) be insoluble in water, and (3) provide enough space in their porous structure for ions to pass freely in and out of the solid. 4, fiche 5, Anglais, - ion%20exchanger
