The aggregation of protein molecules into long fibrils is a property of many proteins when they become damaged or denatured. Such aggregates are formed as part of the pathology of many diseases, including Alzheimer’s Disease and Parkinson’s Disease. ... When wheat is milled into flour, starch granules are subjected to physical damage and granules may be fractured, cracked, chopped or otherwise changed. As a result, normal flours may contain varying amounts of starch granules damaged to varying degrees in addition to intact starch granules. Hard wheat flours usually have much higher starch damage values than soft wheat flours. Starch granules in soft wheat endosperm are loosely bound in the kernel and easily released in milling; on the other hand, starch granules in hard wheat endosperm are firmly bound in a much stronger protein matrix and therefore more liable to damage when endosperm fragments are reduced during milling. 1, record 7, English, - hard%20wheat%20flour

2, record 7, French, - farine%20de%20bl%C3%A9%20de%20force

Introduction Tenascin is a large hexameric extracellular matrix molecule with oncofetal properties. During embryonic development the protein is expressed in many parenchymatous organs, where it appears to have a regulating role in epithelial differentiation. In most mature tissues the expression is restricted to the papillary dermis, but reappears in tissue regeneration and repair and in neoplasia. In basal cell carcinoma two forms(Mr 210, 000 and 300, 000 kDa) of tenascin can be found, in contrast to normal skin and fibroblasts, where one form predominantly exists(Mr 300, 000 kDa). 1, record 12, English, - tenascin

Oncogene abnormalities and the microenvironment of the cells, including the extracellular matrix and hormonal milieu, are now understood to be critical determinants of tumorigenesis and metastasis. The molecules we are targeting that participate in tumorigenesis include estrogen, the HER-2/neu tyrosine kinase, and the extracellular matrix protein fibulin-1, thought to function during embryogenesis in the conversion of epithelial cells to migratory mesenchymal cells. 1, record 14, English, - fibulin

The coat of the HIV virion bears numerous viral proteins "spikes" that project into the external medium. Each spike probably consists of four molecules of a protein called gp120 on the outside and the same number of gp41 embedded in the membrane. These envelope proteins play a crucial role when HIV binds to, and enters target cells. Underneath the envelope is a layer of matrix protein called p17, which in turn surrounds the core, or capsid. Gp stands for glycoprotein-the proteins are linked to sugars-and the number refers to the mass of the protein, in thousands of daltons. [From source a]. 2, record 16, English, - p17

Immobilized Biocatalyst Reactors.... The cost of most enzymes is such that they only become economic if they can be released. This has led to the development of immobilization techniques, which involve converting the water-soluble enzyme protein into a solid form of catalyst, either by entrapping the enzyme within a cross-linked matrix of a water-insoluble polymer or by binding the enzyme conically or covalently to the surface of a solid supporting material. 1, record 19, English, - immobilized%20biocatalyst%20reactor
