La production de l'antipode L de la méthionine n'a pas d'intérêt alimentaire puisque c'est l'un des rares acides aminés dont les formes D et L sont assimilées. (...) La méthode d'immobilisation qui s'est avérée la plus efficace est l'adsorption sur DEAE-Sephadex et la production atteignait 20 tonnes par mois en 1972 pour deux réacteurs de 1 000 litres fonctionnant en parallèle. En effet, le dérivé insoluble perd peu à peu une fraction de son activité (40% en 30 jours), probablement par désorption de l'enzyme, ce qui nécessite une recharge périodique.
