La taille des otolithes augmente à mesure que le poisson grandit : quand, pendant la mauvaise saison, sa croissance s'interrompt, une marque se forme sur l'otolithe et c'est grâce aux couches successives ainsi marquées que l'on parvient à déterminer l'âge du poisson. Ce procédé - otolithométrie - est souvent utilisé pour les poissons sans écailles ou dont les écailles ne sont pas clairement marquées par la croissance annuelle.
