Unsweetened or bitter chocolate is chocolate without any type of sweetener added. Bitter chocolate is also the base for all other chocolate products, since it is chocolate in its pure and unadulterated form. As most people who have tried to nibble on a piece of baking chocolate know, bitter chocolate is indeed bitter, and highly unpalatable.

La cafeína es un alcaloide del grupo de las xantinas, sólido cristalino, blanco y de sabor amargo, que actúa como una droga psicoactiva y estimulante. [...] La cafeína es también parte de las mezclas químicas y complejos insolubles guaranina (encontrada en la guaraná), mateína (encontrada en el mate), y teína (encontrada en el té), todas las cuales contienen además algunos alcaloides adicionales como los estimulantes cardíacos teofilina y teobromina, y a menudo otros compuestos químicos como los polifenoles, los cuales pueden formar complejos insolubles con la cafeína.
