Deux méthodes sont utilisées pour emballer les produits sous atmosphère modifiée, à savoir le balayage gazeux et le vide compensé. Le balayage gazeux, le plus simple techniquement, consiste à expulser l'air contenu dans l'emballage en le ventilant par le mélange de gaz, avec pour inconvénient une forte consommation de gaz, et selon sa composition, des risques éventuels pour les opérateurs.
