A board or paper machine comprising one open-ended cylinder, or several open-ended cylinders in series, each covered with fine mesh wire and revolving partially immersed in a trough or vat of stock. Water draining through the wire leaves a mat of fibres to form a web or a number of webs. The wet web or webs are then transferred sequentially to the underside of a moving felt applied at the top of the cylinder or cylinders. The resultant combined web then passes through pressing and drying sections.

Thermometer equipped with a device providing a continuous record of temperature.

A thermograph is a recording thermometer. Usually configured with a pen that records temperature on a revolving cylinder. The pen is at the end of a lever that is controlled by a bi-metal strip of temperature-sensitive metal which bends as the temperature changes.

OBS

The thermometric element is most commonly either a bimetal strip or a Bourdon tube filled with a liquid. In the first case the bimetal element has the form of a helical coil with one end rigidly fastened to the instrument and the other to the recording pen. In the second case the tube is made with an elliptical cross section so that an expression of the liquid caused by a temperature increase will cause the radius or curvature of the bend to increase, thus moving the instrument pen, which is fastened to the tip of the tube. A resistance thermometer and a thermoelectric thermometer may be converted into thermographs if provision is made to record their output.

A steel cable extends from a spring seat at the bottom of the equilibrator to the elevation arc. In operation, the coil spring tension pulls on the steel cable to counterbalance the gun as it elevates and depresses.

In the production of table wines the grapes, ... are normally introduced into a crusher-stemmer, a mechanical device that crushes the berries but not the seeds, and removes the stems.

The rolls are adjustable, and should be not so that the berries are thoroughly crushed without breaking the seeds or grinding the stems. The crushed grapes and stems fall through the rolls into the stemmer, consisting of a stationary horizontal cylinder perforated with holes large enough to allow the crushed grapes to fall through and small enough to retain most of the stems. Rapidly revolving metal paddles hammer the grapes through the holes and the stems are carried out of the end of the cylinder. Both stems and leaves should be removed as they contain undesirable compounds.

Des raisins sont versés dans une machine appelée fouloir-égrappoir. Cet appareil, de création assez récente, combine ces deux opérations. Il écrase légèrement les raisins pour en extraire le jus, puis élimine les rafles après les avoir séparées des peaux et des jus. Il arrive que, suivant la récolte, on élimine ou diminue l'égrappage. Le foulage est une opération délicate, car elle doit faire éclater les raisins sans écraser les pépins.

Le foulage consiste à exercer, à l'aide du fouloir, une pression pour rompre la pellicule du grain et faire sortir la pulpe et le jus. L'action mécanique peut-être plus ou moins violente et les grains simplement fendus ou, au contraire, avec des fouloirs-égrappoirs, réduits à l'état de bouillie. Aux rouleaux tournants en sens inverse d'un des types de fouloirs, on peut ajouter un dispositif pour retenir les rafles tout en broyant les grains. Il s'agit alors de l'égrappage.
