It is classed among the greatest French cheeses and even protected by the strict Appellation Controlee laws to prevent frauds. Crottin de Chavignol is a small cheese, weighing between 5 and 2 oz, depending on the age. The cheese starts as a very white cheese and then turns yellow with a light blue mold and eventually brown(which is rarely seen in this country). Le Crottin de Chavignol est un petit fromage de chèvre cylindrique légèrement bombé et fabriqué au lait cru entier dans les fermes de la région de Sancerre. Bien que l'on ait des traces écrites de la présence de chèvres dans la région depuis 1573; on ne connaît le nom de Crottin de Chavignol que depuis 1829. Traitement pour lequel le SO2 est le plus souvent utilisé. Dans certains cas, on utilise également le H2SO4 ou le HCl. a) Utilisé en fin de séquence, après un traitement au bioxyde de chlore, à l'hypochlorite ou au peroxyde, il permet de détruire les résidus d'agents de blanchiment et d'enlever les ions métalliques. Ce traitement prévient la perte de blancheur (jaunissement) et la dégradation des fibres. Bref, un pH favorable à la stabilité de la blancheur est obtenu (les pâtes alcalines ont tendance à jaunir sous l'action de la lumière et de l'air). b) Utilisé comme prétraitement avant un traitement à l'oxygène ou un stade de peroxyde d'hydrogène, il permet d'améliorer à la fois la blancheur et les propriétés physiques, en solubilisant les métaux de transition. c) Entre deux stades tel que peroxyde et hydrosulfite, il permet d'éliminer l'étape de lavage en créant les conditions acidiques nécessaires à un traitement à l'hydrosulfite, et de détruire (par réduction) le peroxyde résiduaire, qui autrement consommerait l'hydrosulfite.  1, fiche 4, Français, - traitement%20%C3%A0%20l%27acide

The boreal forest is divided into two great transcontinental belts of approximately equal size : the subarctic open lichen woodland and the closed crown forest. This major horizontal sectioning of the two areas reflects the steady dropping of temperature from south to north. The more northern subarctic lichen woodland is a handsome landscape mostly unknown to Canadians because of its few settlements and roads(and also very abundant black flies!). Northern stands of scattered spruce and jack pine, accompanied by balsam fir in Quebec, form attractive open-canopied areas carpeted with yellow, green and light grey lichens. The skylight filter is often confused with the UV filter, because the two do much the same thing. Both are almost colorless(the skylight filter is a very pale pink, while the UV filter is a very pale yellow).
