Le cipaille ou cipâte est un mets réputé de la cuisine québécoise. La manière la plus courante de le préparer consiste à verser un mélange de pommes de terre et de plusieurs sortes de viandes coupées en morceaux dans un récipient profond tapissé d'une abaisse de pâte épaisse, puis de recouvrir le tout d'une autre abaisse.
