Les phytostérols [...] sont des composés très intéressants, précurseurs biologiques de certains stérols et stéroïdes animaux (vitamines A, hormones) dont on connaît le rôle dans la croissance tissulaire. Le delta 7 stigmastérol, l'un des deux principaux composés de la fraction stérolique, est un dérivé du stigmastérol appelé encore «facteur d'assouplissement dermique».
