4, record 2, French, - hydrolyse
Record number: 2, Textual support number: 2 CONT

The development of an industrial process for hydrolysis of concentrated sucrose solutions, using immobilized invertase, has led to the study of the action and stability of this enzyme in concentrated media. In turn this led to modeling of the action mechanism of invertase and research into the causes of its increased stability in the presence of high levels of substrate. 4, record 3, English, - hydrolysis

Record number: 3, Textual support number: 1 CONT
3, record 3, French, - hydrolyse

Record number: 5, Textual support number: 1 CONT
Enzymes sometimes form transient covalent bonds with their substrates. In one example, a carboxyl group in a polypeptide chain forms a covalent bond at an activated serine residue of a protease as the backbone chain is broken. When the unbound portion of the polypeptide chain has diffused away, a second step occurs in which a water molecule hydrolyzes the newly formed covalent bond, thereby releasing the portion of the polypeptide bound to the enzyme surface and restoring a hydrogen atom to the serine. 4, record 5, English, - hydrolyze
