Le Food Protein R&D Center (Texas A&M University) utilise l'interestérification enzymatique de l'huile de coton à basse température (en présence de lipases à spécificité 1,3) pour en modifier les propriétés physiques. On produit ainsi, par interestérification de l'huile naturellement riche en acide palmitique (28%), suivie d'un fractionnement, des fractions enrichies en cet acide (49 %) utilisables dans la fabrication de margarines «tartinables» ne contenant pas d'isomères -trans (absence d'hydrogénation).

interestérification : technique utilisée industriellement en vue de modifier les propriétés physiques (point de fusion), plastiques et rhéologiques des matières grasses par un simple réarrangement de la répartition de acides gras dans les triglycérides.
