Método físico de conservación, comparable a otros que utilizan el calor o el frío. Consiste en exponer el producto a la acción de las radiaciones ionizantes durante un cierto lapso, que es proporcional a la cantidad de energía que deseemos que el alimento absorba.

La irradiación de alimentos consiste en exponerlos a energía procedente de fuentes como los rayos gamma, los rayos X o los haces de electrones. Durante este proceso, el alimento no se calienta, como ocurre cuando se somete a microondas, ni retiene radiación. La irradiación no hace que los alimentos sean radioactivos.

The method is designed to destroy germs, bacteria or molds and to ensure a good conservation of the product. Ionization causes no destruction of vitamins and generates no degradation products.
