Ce tableau fait apparaître quelques productions essentielles: le soja, l'arachide, le coton, l'olivier, le tournesol, le colza et le sésame pour les huiles fluides alimentaires qui en 1961, constituaient environ les deux cinquièmes de la production totale des matières grasses dans le monde.

OBS

En fait, le terme "huile" ("oil" en anglais) désigne déjà en soi "les corps gras liquides à la température ordinaire", par opposition aux "graisses" ("fats" en anglais) qui doivent être chauffées pour devenir liquides. Cependant, toutes les sources consultées, bien qu'elles fassent cette distinction, emploient "huile fluide" ou "huile liquide" ("liquid oil" en anglais) dans certains contextes particuliers, pour faire ressortir encore plus clairement, semble-t-il, la différence avec les graisses.
