Nectar is a high brix (60-70 percent) concentrate that includes all nutrients originally included in raw sap coming from the tree. It is a natural sweetener with healthy benefits that could be used in many different foods and beverages, creating new opportunities for maple market development.

Tout récemment, le «nectar d'érable» a fait son apparition dans le «Règlement des producteurs acéricoles sur les normes de qualité du sirop, de l'eau et du concentré d'eau d'érable et sur le classement du sirop d'érable». Il s'agit, selon ce règlement, d'une sève concentrée avec une teneur en extraits secs solubles comprise entre 60 et 70 °Brix, obtenue exclusivement par un processus de concentration [...] qui ne modifie pas les propriétés intrinsèques de l'eau d'érable concentrée. Ce nectar serait plutôt destiné à la transformation alimentaire.
