Un gaz porté à une température supérieure à la température critique se comporte à hautes pressions comme un gaz quant à sa mobilité (faible viscosité), et comme un liquide quant à sa densité (fort pouvoir dissolvant). Cette propriété est mise à profit pour procéder à des extractions de substances grâce à des solvants supercritiques (hydrocarbures variés ou gaz carbonique). Les substances dissoutes sont ensuite libérées de la solution par diminution de la pression ou/et par augmentation de la température ce qui est plus simple qu'avec les méthodes de distillation ou d'extraction par solvants classiques. La température de travail peut être relativement basse, ce qui est un avantage pour certaines substances agro-alimentaires ou pharmaceutiques thermosensibles et peut permettre des économies d'énergie.
