Le Cantal a le goût de son terroir. Tradition, authenticité, générosité, il domine le pays vert, celui des volcans éteints, des prairies, des forêts et des rivières. Il se présente sous forme cylindrique. Le cantal est dit «jeune» à 30 jours d'affinage en cave. Sa pâte ferme et souple prend alors une douce saveur du terroir, associée à un léger goût de lait. Cette pâte de couleur ivoire et encore tendre, se recouvre d'une fine croûte gris-blanc.
