Séchage. [...] L'opération consiste à exposer des animaux marins dans une ambiance de faible degré hygrométrique, naturelle ou artificielle, pour réduire la teneur en eau. Cette dissection ralentit l'action des bactéries et des enzymes et réduit l'altération. Les procédés de séchage se sont améliorés : déshydratation sous vide, lyophilisation.
