Les améliorateurs de performance issus de la biotechnologie sont administrés aux animaux ou aux poissons par l'alimentation, de manière régulière ou par période pour stimuler leur productivité et/ou améliorer leur rapport viande/graisse. La somatotropine bovine (BST) ou hormone de croissance bovine est un de ces améliorateurs de performance. Il s'agit d'une protéine hormonale hypophysaire qui stimule non seulement la croissance osseuse et l'anabolisme protéique, mais aussi la galactopoïèse (augmentation de la sécrétion lactée au cours d'une lactation établie chez les bovins).
